Est. 2014 · Corner of Maple & 7th

Slow mornings,
warm crust, real butter.

A sunlit neighborhood cafe where the sourdough ferments for 36 hours, the espresso is pulled to order, and every pastry is laminated by hand before the sun comes up.

Why Maison Crumb

Small batches. Big devotion.

We make less, on purpose, so we can make it properly. Here is what that gets you on a Tuesday morning.

🌾

Milled, not bought

We stone-grind organic heritage grains in-house weekly, so the flour is fresher and the crumb is tender, nutty, and impossible to fake.

Patient by nature

Our levain rests 36 hours before it ever sees the oven. That slow ferment is gentler on digestion and gives the loaf its deep, sour character.

Rooted in the block

Butter from a farm one valley over, honey from rooftop hives, beans we roast ourselves. You can taste exactly how close home is.

Our Story

It started with one stubborn starter.

In 2014, Lena Vasquez quit a fine-dining pastry job, borrowed a deck oven, and started feeding a jar of wild yeast she named "Doris." For the first year, Maison Crumb was a single folding table outside a flower shop on Maple Street.

Word travelled the way good bread always does. Today we are a full corner cafe with a wood-fronted counter, a tiny roastery in the back, and the same Doris bubbling away in the walk-in. The mission never changed: make food slowly, source it honestly, and treat every regular like family.

The regulars say it best

We have served the neighborhood for over a decade. Here is why they keep coming back.

"I have tried every bakery in a 20-mile radius and nothing comes close to that 36-hour loaf. The crust shatters, the inside is custardy, and the staff actually remember my dog's name."

"We booked Maison Crumb for our wedding morning pastry spread and our guests are still talking about the almond croissants. Lena and her team are the real deal."

"My remote-work HQ. The wifi is fast, the flat white is perfect, and nobody rushes you out. It feels less like a cafe and more like the world's coziest living room."

Questions, answered

Still curious about something? Ask us at the counter, or send a note through the form below.

Do you take reservations? +
Weekdays are first-come, first-served, and there is almost always a window seat free before 9 AM. For weekend tables of 4 or more, or any catering, use the booking form at the bottom of this page and we will confirm within a few hours.
Are there gluten-free or vegan options? +
Always. We bake a daily gluten-free seeded loaf, two vegan pastries, and oat, almond, and soy milks are standard at no extra charge. Allergen cards for every item live right on the counter.
What time do the pastries usually sell out? +
Croissants and the canelé tend to go by 11 AM on weekends. We bake a fresh afternoon batch around 1 PM, but if there is something specific you must have, reserve it through the booking form a day ahead.
Is the cafe good for remote work? +
Very. Free fast wifi, plenty of outlets along the bench seating, and a no-rush policy before noon. We do ask that laptops migrate to the communal table during the weekend lunch peak so everyone gets a seat.
Do you sell your sourdough starter or teach classes? +
We give away a scoop of Doris for free to anyone who brings a clean jar. Hands-on bread and lamination workshops run on the first Saturday of each month. Ask the booking form to be added to the waitlist.
